A number of new suppliers I have contacted have low stock numbers at the moment. Should I consider changing niche?

It sounds like it may be worth branching out a little within your niche using your "direct competitors" (those other retailers you have identified that are already dropshipping) for inspiration.

Assuming you have located at least 3 of these direct competitors, then we can check which other types of products they are selling that ARE in stock, and which brands these products fall under. That way you can contact those suppliers confident that they do have products in stock.
If you're finding that every supplier is completely out of stock of all products, which is quite unusual, then you can try "niching up" a level in the meantime and adding in other types of products that are available and could still fit within your niche. Remember to use your direct competitors for inspiration on what types of products you could "niche-up" to.
This can help boost your sales in the meantime whilst you prepare for your main suppliers to come back in stock and you can hit the group running when they are!
You will get there, it may just take a little pivoting at this stage, so keep at it!
